Barbequed Lemon- Herb Chicken

Ingredients:
1/3 cup lemon juice
3 tbsp vinegar or balsamic vinegar
1 tbsp extra virgin olive oil
1 tbsp chopped thyme
1 tbsp chopped rosemary
1 tsp crushed chopped garlic
Salt and pepper to taste
2 chicken breasts (5-6 oz) skinless, boneless

Directions:
In a large bowl, combine first seven ingredients, mix thoroughly. Place chicken in marinade, cover in a plastic container and refrigerate Overnight. Cook meat thoroughly, on barbeque until meat is no longer pink and juices run clear. ( 170 f. on a meat thermometer) Serve with your favourite side dish. Enjoy!


Banana nut Protein Pancake

Ingredients:
6 egg whites, 1 yolk
2 shredded wheat biscuits or 2/3 cup oatmeal
1 tbsp almond butter
1 small banana
vanilla extract to taste
1-2 Splenda packets to taste
sprinkle of cinnamon

Directions:
In a blender mix all the ingredients above, blend on high. Spray frying pan with a non stick cooking spray, and cook on medium heat. Serve hot on plate and enjoy!

Optional but can also b served with no-sugar maple syrup and ripe strawberries.


Turkey Apple Burgers

Ingredients:
12oz Lean turkey meat
1 small chopped apple
3 tbsp ground flaxseed
3 egg whites
2 tbsp horseradish mustard
1 tsp garlic, thyme and cinnamon

Directions:
Mix all ingredients together in a bowl and form patties. Grill on medium heat. Check the centre to make sure juices run clear.
